apple + pear crumble
If you were to ask me what my favourite dessert is, its a tie between a banoffee pie and an apple and pear crumble. Chilled banoffee in the Summer and a warm crumble in the Winter! I make the latter on repeat on a cold wintery Sunday to have post dinner and its the ultimate comfort food paired with an icy raspberry ripple ice-cream.
Ingredients
Apple Mixture
A mix of 6 apple and pears chopped into bite size pieces
1/4 cup maple syrup
1/2 cup water
1/2 tsp cinnamon
1/4 tsp all spice
1 tsp vanilla essence
Crumble Mixture
DRY INGREDIENTS
1 cup GF oats @themerrymill
1/2 cup almond flour
1/4 cup chopped pecans
1/4 cup mixed seeds
2 tbsp coconut sugar
Pinch of salt
Mix together
WET INGREDIENTS
1/4 cup yoghurt @coyo_uk
2tbsp melted butter @naturli
2 tbsp extra virgin olive oil
Mix together
method
Preheat oven to 180deg.
For the apple mixture, mix the wet ingredients together with a whisk until combined.
Put chopped apple and pears in an oven proof dish and pour the wet mixture on top
Bake in the oven for 20 mins
While the apples and pears are cooking, prepare the crumble. Add wet ingredients to the dry ingredients and mix well. When the apples and pears are cooked add the crumble mix on top and bake for 25 mins until brown and crispy on top
I served this delicious warm crumble with my fave vegan ice cream from @boojabooja raspberry ripple but would also taste delicious with your fave yoghurt or vanilla ice- cream. Love the hot cold combo from the crumble and the ice cream 😋
