turmeric + coconut balls

These delicious balls of sunshine were first introduced to me during my nutrition course with IINH. I’ve changed some of the ingredients to my liking. They are the prefect treat and packed with goodness from the nuts, dates, seeds and turmeric.

ingredients

150 g walnuts/cashews/almonds/pecans (or whatever nuts you have in the cupboard)

30g pumpkin seeds

50g desiccated coconut

½ level teaspoon ground turmeric

½ level teaspoon cinnamon

¼ level teaspoon salt

130g/ 12 dates Medjool dates, chopped small

½ level teaspoon vanilla extract

2 tbsp coconut oil

To coat:

40g desiccated coconut

1/2 level tsp ground turmeric

method

  1. In a food processor blend together nuts, seeds, desiccated coconut, turmeric, cinnamon and salt to a fine texture.

  2. Add dates and quickly pulse until it all resembles breadcrumbs. Add vanilla extract and coconut oil, then blend until the whole mixture forms into a ball.

  3. Remove dough from the food processor and hand-roll about 1 tablespoon of it into a walnut sized ball.

  4. Repeat with the rest of the mixture. Place in fridge for 30 minutes.

  5. To coat, mix the desiccated coconut and turmeric in a shallow bowl, then roll and toss the balls in the mixture and return to fridge for 1 hour minimum.I hope you love these as much as I do! Enjoy and let me know if you have any comments or questions!

  6. Store these little energy and nutrient bombs in the fridge for up to 4 weeks OR freeze for up to 3 months
