caramel squares

These are the perfect treat to have in the house for when you have friends or family are coming over for a cuppa. They store well in the freezer and fridge so can be taken out as needed :)


ingredients

Makes 1 large loaf

BISCUIT

  • 1+ 1/2 cup ground oats

  • 1/2 cup ground almonds

  • 2 rbsp coco yoghurt

  • 100g medjool dates

Smooth biscuit mix out on a lined tray

CARAMEL

  • 120 medjool dates

  • 1/3 cup almond/cashew/peanut butter

  • pinch sea salt

  • 1 tsp vanilla essence

Blend until smooth and add a layer of caramel to the biscuit

Cover with cling film and put in the freezer for 1 hour

Melt your favourite dark chocolate in a glass bowl over boiling water and after 1 hour pour on top of the caramel and biscuit

Cool in the fridge for >1hour and slice with a sharp knife dipped in warm water.
