bircher with grated apple

Breakfast can get a little repetitive if you dont shake it up every now and again dont you think? I find that overnight oats or bircher is the perfect alternative to your regular porridge or cereal. The beauty of it is that it can be made the night before which allows the ingredients to marry together which makes it a more flavoursome brekkie. Not only that but when you soak oats and seeds overnight, they are easier to digest and their nutrients are better absorbed in the body.

If you wanted to, you could make a bigger batch of these and store them in a sealed container for 3 days in the fridge and add different toppings each day.


ingredients

Makes 1 bowl

  • ½ cup oats per person

  • 1/4 tsp cinnamon

  • 1 heaped tbsp chia seeds

  • Tiny pinch of himalayan pink salt

  • 1 heaped tbsp hemp seeds

  • 1 cup almond/oat mylk

  • 1/2 tsp vanilla extract

  • Zest and juice of 1 orange (optional)

  • 1 Organic grated apple (or other fruit of choice)

  • 1 tbsp heaped coconut yoghurt (or other plant based alternative)

  • One tablespoon of nuts and seeds of choice

method

  1. Add the oats, salt, cinnamon, chia seeds + hemp seeds to a bowl or glass jar and mix well.

  2. Add the mylk, orange juice and zest, vanilla and give it a good stir

  3. Add the coconut yoghurt and mix again.

  4. Store in the fridge covered overnight.

  5. Serve in the morning with 1 grated apple, some nut butter, more yoghurt and a sprinkling of seeds.
